MORE KETO & LOW CARB HOLIDAY RECIPES

Do you have the cranberry controversy at your house during the holidays? You know, people that are cranberry jelly (the canned kind) lovers, and then the people that prefer cranberry sauce or relish?

Ohhhh it could get bad at our house!

Hubs is Team Canned Jelly all.day.long. He loves it and it has to be on the table every holiday. While I am Team Homemade until the day I die!

I think we had been together for quite a few years before I finally got him to try my homemade version. He is so dang stubborn!

I honestly think he would have turned his nose up at it just to spite me, except for the addition of jalapeno. You see, I know the way to his heart is through spice. I am sneaky like that. But, once I got him on board, I had to always put jalapeno in it. If anyone wanted cranberry sauce sans the peppers I had to make a separate batch.

He is so spoiled!

The good thing is that this recipe is great either way. If you love spice, add the jalapeno. If you prefer a more traditional sauce, leave them out.

Want to add a bit more orange? Substitute half of the water for fresh-squeezed orange juice (it is really good). Just remember that will add a bit more in the carb area. You could also add orange extract, but use it a little at a time.

But it is the holidays.

Carbs and calories don't count, right?

FAQS ABOUT

Can I use frozen cranberries instead of fresh? Yes, just know that they will take longer to cook if you use them straight from the freezer. You could also defrost in the fridge overnight if you want.

I don't like whole berries, can I blend this? You could simmer the sauce longer so the berries break down, or use an immersion blender.

How do I store the leftover Keto Cranberry Sauce? The leftover sauce will keep in an airtight container in the fridge for 10 to 14 days. Or you could freeze it for up to 3 months.

Last thoughts about Keto Cranberry Sauce

I have learned that this doesn't have to just be a holiday kind of dish. Now that you know how easy it is to make from scratch you can make it throughout the year.

Cranberry adds that little "sumthin" that can really jazz up chicken and pork. Hubs has fallen in love with cranberry mustard sauce on pork loin. It is soooooo frickin' good!

We also like to do a mid year Thanksgiving for just us. Kind of an un-anniversay/un-birthday celebration. It is kind of nice to set aside days in the year to make sure you stop and take the time to be thanful for everything you have.
