As I type this I am munching on some of these KEto Candied Pecans and thinking OMG Christmas is 10 days away!

How the heck did that happen? I know I ask that every year but dang!! I am still shopping for Christmas presents people! UGH!!

One of the things I am doing this year is going back to things I used to do many many years ago.

I loved to make gift baskets for people with tons of homemade goodies in them. I know I really love a handmade gift, and due to not being able to drive, I decided that it would be a great idea to tap into my cooking side and whip up tasty treats for the people I love.

Things like salsa, hot sauce, BBQ sauce, BBQ rub, Spice blends, cookies, etc.

Who wouldn't want a big basket of that kind of stuff? I am like sign me up and I will take it all!

But, on a serious note, the past couple of years have brought a LOT of stress and issues into my life. I have my health issues due to contracting Covid in 2020, I almost lose my son, ongoing legal issues with my ex, and on and on.

I decided that I wanted to go back to a simpler time. Where I focused on the people I love and putting smiles on their faces. Where I just enjoyed spending time with them and didn't worry about how much I was getting for them.

I want to end 2021 with smiles and hugs and usher in 2022 full of happiness and love.

How can you go wrong with that?

    Anywho, sorry I rambled there didn't I?

Let's get to the recipe, shall we?

    FAQ about Keto Candied Pecans

Are candied pecans really OK on the keto diet?

Not if you are talking about the traditional candied pecans. They are full of tons of sugar, and carbs. The sugar substitute that you use for this recipe does not have any impact on your glycemic index, has zero calories, and has zero net carbs.

My candied pecans stuck together, what did I do wrong?

When you take the nuts out of the oven to cool make sure to separate them as much as possible. Once you have some space between the nuts, even if they stick together you can easily break them apart. It is no big deal really, they just look nicer if you are giving them as gifts. If not you can just break them apart however you want.

How do I store these keto candied pecans?

Place the cooled nuts in an airtight container in your pantry for up to 2 to 3 weeks if sealed properly. In a refrigerator between eight to ten months and, if frozen, candied pecans will keep anywhere from 18 months to 2 years.
