Y'all, I can't believe it is 2022!

In some ways 2021 felt like the longest year ever, but also it feels like just yesterday it was 2020.

Am I right? Or is it just me?

Over this past year I have struggled with my Long Covid, almost lost my son, found out we are going to be grandparents again, just to name a few things.

I have also fallen off the low carb wagon more times than I can count due to my health issues. Which really is kind of a catch 22 because my chronic fatigue makes just cooking a meal feel impossible, yet I know if I can stick to eating low carb I will physically feel better. So it is a brain battling the body kinda thing and it is a pain in the arse!

I also decided the whole New Year resolution thing is not for me anymore because I tended to beat myself up when I inevitably didn't achieve my goal.

Now I have decided that I will celebrate my wins and give myself grace on those losses.

My goal this year will be to discover what makes me feel better/helps my illness without stressing out which makes my illness worse. It may take a bit of tap dancing but I am determined to figure it out!

I do know that when I cook a good meal for my family it makes me feel better.
