I have always been a peanut butter lover. Which my Mom found quite funny because she said that I was such a Daddy's girl I only ate things he liked. If Mom put broccoli, cauliflower, brussels sprouts, etc on my plate and I saw my Dad didn't eat them...nope, not happenin'.
But when it came to peanut butter? My Dad loved peanuts, but hated peanut butter!
I want to think that it was because of the things that were added to store-bought peanut butter, especially back in the day before you could get "natural" peanut butter at the store.
Possibly it was a texture thing? I am just not sure.
But I will say that once I started making my own peanut butter I totally got why some people just don't like the store-bought kind. And it is ridiculously easy to make peanut butter, well ANY nut butter actually, at home so why not give it a try?
You see, peanuts themselves are totally keto. Yes they have carbs, and there are other nuts that are lower in carbs, but for the amount, you would eat in a serving they are fairly low.
It is the sugar that most commercial peanut butter adds that makes them high in carbs.
Now, for me, someone that is more low-carb vs strict keto, that doesn't add a lot of issues. But for someone that suffers from some chronic medical conditions that sugar can exacerbate, homemade is the way to go.
Plus, even though I can have more carbs than someone that is strict keto, I don't wanna go blowing all of my carbs on one thing!
This "recipe" calls for roasted peanuts, some MCT oil (optional), and some low-carb sweetener, (also optional). It makes approximately 2 pints of peanut butter, which equals 32, 2 tablespoon, servings. Which calculates to less than 3 net carbs per serving vs 8 carbs per serving of your typical store-bought peanut butter.
So yes, peanut butter can totally be keto!
INGREDIENTS NEEDED TO MAKE HOMEMADE KETO PEANUT BUTTER

- Roasted peanuts (salted or unsalted)
- Coconut or MCT oil
- Besti Monk Fruit and Allulose Crustalized Sweetener
- Pink sea salt, optional (to taste)
HOW TO MAKE HOMEMADE KETO PEANUT BUTTER
STEP 1
Using a good food processor, a high-powered blender, process the peanuts to a sandy consistency. Add 1 tablespoon of oil (if using). If using a food processor please see the notes below.
STEP 2
Continue to process/blend, (it will take some time) until the peanut butter reaches the desired consistency.
STEP 3
Drizzle in the other tablespoon of oil to make it slightly thinner (if using) and to add fat.
STEP 4
Add sweetener, to taste.
STEP 5
Place peanut butter into pint jars or airtight containers.
STEP 6
Store the peanut butter at room temperature where it will keep for at least 2 weeks, or store it in the refrigerator, where it keeps for up to 4 weeks.

Each food processor’s strength is different. It just needs a few extra minutes in the food processor.
How should I store my homemade peanut butter, and how long will it last?
If stored in an airtight container in a cool dry place it should last about a month. If you store it in the refrigerator it will last up to 3 months.
Yes. Depending on the nut you use you would probably need to add more oil. I would recommend looking up specific recipes for the nut you would like to use.
Last thoughts about Homemade Keto Peanut Butter
This recipe is super simple, but it does require some patience. If using a food processor vs a high-speed blender (like I do), the food processor will need to run for around10 minutes to achieve a creamy peanut butter texture.
You will need to stop the food processor often (about every minute) to give the food processor's motor a chance to cool down. This break gives you the opportunity to scrape down the sides of the bowl.
The amount of peanuts you use should be proportionate to the size of your food processor. I use 6 cups of peanuts in my 14-cup food processor. If yours is smaller, you will need to break this up into two batches.
You don’t really need anything except for dry roasted peanuts to make homemade peanut butter. You can use unsalted or salted peanuts in this recipe, but if yours aren’t salted, you’ll need to season to taste with salt. Adding additional oil, and a low carb sweetener is 100% your own choice.
