WOW, how is it almost Mother's Day already? I feel like it was just January! Time is flying by SO quickly!!

I can't believe that I forgot to tell y'all that we have a new grandson!

Yup, Ryder was born on Feb 22nd and is so damn cute I can barely stand it!! So that makes 3 adorable grandkids for this Nana to spoil rotten 🥰 which is a job I will gladly take!

Nowadays Mother's Day makes me think more about my grandkids and their Moms vs Me.

My daughter and daughter-in-law are both amazing women. They have their own individual challenges when it comes to raising their kiddos and watching them face those challenges, learn, and grow, is just so awesome to watch.

Now I like to make them breakfast on Mother's Day, but I don't want to spend all of my time in the kitchen. I want to be laughing with my girls and snuggling the grandbabies! 

So a make-ahead breakfast casserole is perfect!

INGREDIENTS NEEDED TO MAKE KETO BLUEBERRY FRENCH TOAST BAKE

  • Keto bread
  • Cream cheese
  • Eggs
  • Almond milk
  • Heavy cream
  • Keto maple syrup
  • Vanilla
  • Lemon zest
  • Blueberries

HOW TO MAKE KETO BLUEBERRY FRENCH TOAST BAKE


STEP 1
Butter or lightly grease a 9x13 baking dish. Place the bread cubes into the baking dish.

STEP 2
Cream the cream cheese in a mixing bowl with an electric mixer. Add in the eggs and continue to mix until combined. Add the almond milk, heavy cream, maple syrup, vanilla, and lemon zest; continue to mix until thoroughly incorporated.

STEP 3
Pour the prepared cream cheese mixture evenly over the bread and sprinkle the blueberries over the top. Stir to combine well, making sure bread is pressed into the cream cheese mixture.

STEP 4
Cover the baking dish tightly with foil and refrigerate overnight. If making it the same day, let it stand at least 1 hour before baking.

STEP 5
Preheat the oven to 350F.

STEP 6
Remove the baking dish from the refrigerator (if soaked overnight)  and let stand on the kitchen counter for 30 minutes.

STEP 7
Bake covered for 30 minutes then remove the foil and bake an additional 30 minutes, or until set and top is golden brown.

STEP 8 
Remove from oven and sprinkle with more powdered sugar substitute. You can also garnish with more blueberries and toasted walnuts, and serve with a side of keto maple syrup.

FAQS ABOUT KETO BLUEBERRY FRENCH TOAST BAKE


I don't like blueberries, can I leave them out?
If you are not a fan of blueberries you can of course leave them out. You could just make a plain french toast casserole, or add another berry of your choice. If using strawberries I would recommend chopping them so they are blueberry size bites.

Do I have to use the bread recipe provided?
Well I will say first that I have never tried this with another keto bread. With that being said, I am sure you could sub your favorite keto bread (seriously though the bread recipe provided is amazing) for the bread recommended.

How do I store the leftover Keto Blueberry French Toast Bake?
I like to cut any leftovers I might have into single-serving squares/portions and store in an airtight container in the fridge for up to 5 days. Alternately, if you don't think you will eat it in that time, you could freeze it for up to 3 months. To reheat allow the casserole to thaw in the fridge overnight and then place in a preheated 350-degree oven until warm.

Overnight, or make ahead, casseroles have always been my jam. 

From the time I came across my first recipe, I started saving each and every one. I was obsessed. And why not? Being able to throw something together the night before a big holiday or get together so you can get up, put breakfast in the oven, and enjoy the day/company is genius, right?

When I went low carb I thought those days were over because most of those casseroles rely on bread, or something "carby" as the base of the dish. So you know as soon as I discovered the keto bread recipe I use (OMG is amazing) the wheels started turning as I thought about all of the breakfast recipes I would again be able to make!

So now you have it, overnight breakfast casseroles are once again on the menu!
