Can I eat pasta on the keto diet?



That is the million dollar question, right?

I can remember when I first decided to go low carb. I had to ask myself, as a card carrying carboholic, can I do this? Can I go without bread, potatoes, rice, and most of all, can I live without pasta? Because traditional pasta is not allowed on the keto diet. 

Why? Because a one-cup serving of cooked spaghetti contains between 37–43 grams!

Even for people that are consuming 50 grams of carbs a day, that is too much. And who eats just a cup of pasta anyway. Not me!

So, like many others, I began looking for ways to keep my pasta cravings at bay while not consuming a week's worth of carbs in one sitting.

Like many people I went to the good ol' zoodle, or zucchini noodle, to begin with. And don't get me wrong, I do love me a good zoodle dish. This Chicken Alfredo Zoodle Bake and Beef Zoodle Stir Fry are two of my faves. 

But sometimes a zoodle just doesn't cut it. 

I have come up with a ton of pasta replacement ideas and recipes. This Low Carb Cauliflower "Mac and Cheese"Herbed Spaghetti Squash with Garlic and Parmesan, and Butternut Squash Noodles are a few that hubs and I both love. 

But then I discovered hearts of palm noodles. These fabulous noodles opened up a whole new level of yum for me. Not just me, but my family and friends. I tested out so many recipes on them without telling them what the noodles were, and they all love every single dish I put in front of them! 

So, we know they taste good and kept as well as non-keto people enjoy them, so let's break down the carb count, shall we?

  • Zucchini noodles - 1 cup has about 4 grams of net carbs
  • Cauliflower - 1 cup has about 3 grams of net carbs
  • Spaghetti squash - 1 cup has about 8 grams of net carbs
  • Butternut squash noodles - 1 cup has about 8 grams of net carbs
  • Hearts of palm noodles - 1 cup has about 2 grams of net carbs

So you can clearly see that they are a great way to get your pasta but save your carbs!

HOW TO MAKE KETO LEMON ASPARAGUS CHICKEN PASTA


STEP 1

Season the chicken breasts with salt, pepper, and 1 teaspoon (each) of Italian Seasoning.

STEP 2
In a large skillet over medium heat, heat oil. Add chicken and cook until golden and no longer pink, approx 6 to 8 minutes per side. Transfer to a plate, tent with foil, and allow the chicken to rest.

STEP 3
In the same skillet, melt butter over medium heat. Add onions and asparagus and season with salt and pepper. Cook until starting to soften, 5 minutes. Add cream, broth, lemon juice, and garlic and simmer for 5 minutes.

STEP 4
Slice chicken into strips.

STEP 5
Stir in the Parmesan cheese. When completely combined, stir in the mozzarella cheese and let cook until melted.

STEP 6
Add the linguine and toss until combined. Add the lemon slices. Top with sliced chicken and garnish with parsley.

FAQS ABOUT KETO LEMON ASPARAGUS CHICKEN PASTA


What can I use instead of asparagus?
If you do not like asparagus you could try using green beans, broccolini, or broccoli, if you are not strict keto you could give snap peas a try, or try a green like kale or spinach.

Could I use boneless skinless chicken thighs instead?
Of course, the cooking time will vary but thighs would be delicious in this as well.

How long will the leftover Keto Lemon Asparagus Chicken Pasta keep in the fridge?
It will last up to 5 days in an air-tight container.

Can I freeze this Keto Lemon Asparagus Chicken Pasta?
I have not tried to freeze this but I have frozen lasagna made with hearts of palm noodles.

Just a quick note about non-keto peeps and these noodles.

My son loves the lasagna I make with hearts of palm noodles. In fact, he prefers it and has requested it on numerous occasions. My husband likes it too.

This dish? My husband LUVVVVVVVS! He practically licked the bowl clean. And when I tell you this man is not overly dramatic about anything? Ya, he is an "It is fine" kinda guy. So for him to go that gaga over a recipe made my heart go pity pat!

In fact, he has loved every single heart of palm noodle recipe I have created, there hasn't been one he has given me a "meh" on. So you can feel safe serving this, plus the other recipes I will link below, to your friends and family, even if they are not living la vida low carb!
