This chicken salad is so incredibly easy to make. You can cook up some chicken on the grill, or in the Instant Pot, or just grab a rotisserie chicken from the store.
But I have had some people ask me if chicken salad is a good keto lunch option.
Is chicken salad keto?
To that, I say a big fat YES and a delicious one at that!
But....you have to realize that not all ingredients are equal, and not all ways of eating it are low carb.
I make sure to use this zero carb mayo and this ranch dressing. I know it is not many, but carbs can sneak in under the radar that way.
Then of course there are the veggies you add to it.
I use celery and green onions in this chicken salad for some crunch. You could add bell pepper, chopped broccoli, or any other keto-friendly veggie for your crunch factor.
I also love to have a big bowl of some kind of salad in my fridge so when the munchies hit I can just grab a few low carb crackers and go to town. I get my crunch satisfied as well as my fat craving. And if you have been keto or low carb for any amount of time you know that fat helps us to feel full and satisfied.
So this chicken salad can actually be like a savory fat bomb with 25 grams of fat and less than 2 net carbs!

INGREDIENTS NEEDED TO MAKE BACON RANCH CHICKEN SALAD

For the salad:
- Cooked chicken
- Mayonnaise
- Ranch dressing
- Celery
- Sharp cheddar cheese
- 4 green onions, sliced
- Cooked bacon
- Pink sea salt
- Fresh cracked black pepper
To serve:
- Keto rolls or lettuce leaves for wraps
- Extra cheddar cheese and green onions for garnish

Can I use chicken breasts or thighs for this chicken salad?
Yes, I purposely did not specify breast or thigh because, if you are using leftover chicken, I want you to be able to use all of it. The fat grams would be different but the carbs would be the same.
Can I use canned chicken for this chicken salad?
You could use canned chicken if you want, just be careful of the salt and taste before you add any.
How long does this Bacon Ranch Chicken last in the refrigerator?
This chicken salad will last up to 5 days in the fridge making it a fabulous meal prep idea!
Last thoughts about Bacon Ranch Chicken Salad
My husband likes to say that I am the salad queen, meaning I will make a salad out of just about any leftovers I have.
Which is 100% true!
This came from when my kids were growing up. They hated, and I mean haaaaaated leftovers. If I put something in a tupperware bowl it would sit in the fridge forever, never to be looked at again.
BUT, if I made it into a salad by adding a little mayo, or dressing, and chopping up a few veggies (in all honesty we weren't low carb back then so I added things like grapes and dried cranberries) they would nosh on it like it was the best thing since sliced bread!
