One of my favorite BBQ/picnic sides is coleslaw. I have loved it since I was a kid, and don't even get me started on the several-year addiction I had to the Colonel's version UGH!! I think I ate it by the gallon!
But, now that my palate is a teensy bit older *koff koff*, as is my rear end, I decided I wanted to update my fave. So I pulled out the ol' thinking cap and got to work.
OK, so part of it was a no-brainer for me. I sub keto-friendly mayo for regular mayo and Besti Monk Fruit and Allulose sweetener for sugar.

KFC's has a TON of sugar (hence the yummy numminess right) so if we take the flavor out, we gotta put flavor in.

I got to thinking, what goes with both of those things?

I know many people are wondering how this serves 12 but a serving of coleslaw is 3 ounces or about 1/3 cup. The calories and carbs are so low you can have more if you want but I stuck to the guidelines for the nutritional info.

Yes, this recipe contains mayo so it shouldn't be left out for more than 2 hours.
