One of my favorite cuisines is Asian. Anything from Chinese, to Japanese, to Philipino, to Thai, etc. Just give me all of that Asian goodness!

But when I went low carb I was so bummed to find that many Asian recipes are just way too high in carbs to be included. I can't tell you how many searches I did to find out what I could and couldn't have. So, when I typed in

Is Thai food keto?


I was SO excited to see that one of my faves, chicken satay, was listed as an option for low carb and keto diets. 

But, of course, the peanut dipping sauce was a big no-no. BOO!

After looking at recipes I realized that the only thing that would make it unacceptable would be the use of sweetened peanut butter and regular sugar or honey. 

Switch those out for homemade peanut butter (or no sugar added store-bought) and keto honey and you have a delicious low carb Thai dish to love guilt free!

Once that was all figured out it was just a matter of putting this recipe on the menu and letting my non-keto family and friends decide if it is a keeper.

My answer was a loud YES from everyone that tried it, so now this recipe in permanently in our meal rotation until we get tired of it.

Which I don't see happening anytime soon. It is an easy recipe, with minimal cleanup, and amazing flavor!

Why would we ever want to take it off?

HOW TO MAKE KETO CHICKEN SATAY WITH SPICY PEANUT SAUCE



STEP 1

To make the marinade, combine the fish sauce, lime juice, keto honey, tamari, sesame oil, ginger, garlic, and crushed red pepper flakes in a small bowl.

STEP 2

Pour marinade into a zipper bag and add chicken. Seal bag and shake to coat chicken in the marinade.

STEP 3

Place the bag in the refrigerator so that the chicken is covered in the marinade and refrigerate for at least 3-4 hours, or overnight.

STEP 4

Preheat the grill, or a grill pan, over medium heat. Divide the chicken evenly onto the four skewers. Oil the grill with the vegetable oil and place the skewers on the grill, turning occasionally until cooked, about 10 minutes.

STEP 5

While the chicken is grilling, combine the peanut butter, fish sauce, sriracha, lime juice, and keto honey in a small bowl. Serve alongside the chicken skewers for dipping.

FAQS ABOUT KETO CHICKEN SATAY WITH SPICY PEANUT SAUCE


I am allergic to peanuts. Are there other sauces that I can use with this Keto Chicken Satay?
Yes! Of course, if it is just peanuts you are allergic to but can have other nuts, you can swap out the peanut butter for another nut butter. I have not tried seed butter, but have heard they can be good as well. 
Other sauces you could try would be Cilantro Lime Crema, Tzatziki Sauce, or maybe something like the Roasted Jalapeno Chimichurri in this recipe!

Can I use pork instead of chicken in this Keto Satay recipe?
Absolutely! I love to swap pork and chicken for each other in recipes and it works well in this one. Just cut one pound of pork shoulder (or butt) into one-inch strips and swap that in for the chicken thighs.

Can I make Keto Chicken Satay in the oven? 
If you don't have a grill don't worry! This recipe can be cooked indoors on a grill pan, or even baked in the oven. Set your oven to 350 degrees F and cook the skewers for about 15 minutes, turning once halfway through. The internal temp should be 165 degrees F.
