So that got my little mind wandering, which can be a dangerous thing, it is small and should not be out on its own!
Why not Caprese in breakfast form?
My answer?
Why the hell not?
So I gathered my goodies and away I went.
INGREDIENTS NEEDED TO MAKE INSTANT POT CAPRESE FRITTATA
- Olive oil spray, or butter
- eggs
- heavy whipping cream
- pink salt
- cracked black pepper
- garlic
- grape tomatoes
- fresh basil
- mozzarella
- Parmesan cheese.
Cut a circle of parchment paper to line the bottom of the dish for easy removal. *See Notes
In a large bowl, crack your eggs, and add the heavy cream, salt, pepper, and garlic. Using an electric mixer, or a whisk, beat the egg mixture until the yolk and whites are fully combined.
Place the tomatoes and mozzarella in the pan and pour the egg mixture over them. Feel free to move the tomatoes and cheese around to make sure they are evenly spaced out in the frittata.
Pour the water into the bottom of your Instant Pot.
Put the pan on the Instant Pot rack/trivet and carefully lower it into the Instant Pot with the handles. If your trivet does not have handles, you can make a handle with folded aluminum foil.
Lock the lid.
Set your Instant Pot to 12 minutes on high pressure making sure the vent is in the sealed position.
Once it beeps, allow a natural pressure release for 10 minutes before unlocking the lid.
Open the lid and pat the top of the frittata dry with a paper towel if needed.
Run a knife along the side to release the frittata, then allow it to cool slightly before turning it over onto a plate.
Top with grated Parmesan cheese, more chopped tomatoes, and more basil if wanted.
FAQS ABOUT INSTANT POT CAPRESE FRITTATA
I don't have an Instant Pot, can I make this Caprese Frittata in the oven?
I have not made it in the oven myself but have had people tell me that they made it in the oven. I would follow the instructions up to placing the frittata in the Instant Pot and instead place it in a 350-degree F oven. I would begin checking around 15 minutes and remove it from the oven when the edges have puffed and browned and the center is not too jiggly.
Can I use canned tomatoes and dried basil in this Instant Pot Caprese Frittata?
Of course, fresh will be better every time but, if you don't have fresh on hand, you can use diced tomatoes (drained well), and 2 tablespoons of dried basil (crushed in the palm of your hand).
How should I store the leftover Instant Pot Caprese Frittata?
Store any leftovers in an airtight container in the fridge for up to 4 days. Reheating eggs can be tricky as they can get rubbery. I would reheat it in a preheated 350-degree F oven for about 10 minutes.
Last thoughts about Instant Pot Caprese Frittata
I did have to buy a pan that would fit into my Instant Pot at Home Goods, but if you don't have a Home Goods, or just don't want to go out, you can get one on Amazon here.
Also, if you don't already have one, this is the Instant Pot I have. I bought the 7 in 1 because you can make yogurt in it.

But back to this gorgeous frittata.

If I am being honest here, I tested this recipe the first time when I was alone and ate half of the frittata on my own!
I have tried it several different ways.
I have used the mini mozzarella balls, and also just cubed some fresh mozzarella cheese.
If you like your cheese to stay in one place, the balls are the way to go, but if you want it a little more "melty" go with the cubed.
I have cut my grape tomatoes in half, and also put them in whole.
If you cut them they add more water to the casserole so it might have to cook longer.
I thought I would want them halved but ended up preferring them whole.
It also fits into my low-carb diet so that makes me even happier.
So jump on the happiness bandwagon with me people!
Trust me it is NOT a fad!

- 1 cup grape tomatoes plus more for garnish if wanted
- 1/2 cup fresh basil cut chiffonade, plus more for garnish if wanted
- 4 ounces mini mozzarella balls or 4 ounces of fresh mozzarella cut into cubes.
- 1 cup water
- Fresh grated Parmesan cheese
Instructions
