Greek Salsa - Fresh, easy to make, and delicious, this salsa puts a Mediterranean twist on your traditional salsa.
I don't know about you but, once the holidays have passed, I am done with the cold.
Don't get me wrong, I love the crispness of air when Autumn rolls around. I love watching the leaves turn, wearing my hoodies and Ugg boots for the first time, and drinking nice hot lattes in place of my iced teas.
I love all of the fall produce that hits the farmer's market, I love decorating for Halloween, cooking a big Thanksgiving meal, and hoping for a white Christmas.
This year we DID have a white Christmas!
We were ALL so excited!!
Kylee and her Noni (aka Mini Me) built a snowman, and then had a blast tearing it down and having a snowball fight.
The snowball fight even got brought inside, which means my son shoved a snowball down the back of my shirt.

But, now that all of the frivolity is out of the way, and Kevin has to work on New Year's Day (which means no New Year's Eve partying for us), I am ready for warmer weather.
Hahaha like that is going to happen.
We will be lucky to see temps above 50 degrees for a quite a while. ?
I know I know, suck it up chick!
So this leaves me a LOT of time to think about food.
Like I don't already do that already right?
And when it comes to this time of the year, and thinking about food, I always start looking at some healthy options. I know I should be a little more conscious of what I am eating because.....well, because I haven't been thinking about healthy anything for the last couple of months!
Candy, cookies, cake, cheesy, creamy, rich, and delicious, those are the things that I have been thinking about.
So, let us now move into 2018 with fresh and healthy on our minds, shall we?
At least until Valentine's Day gets here ?
This salsa, or salsa period, is a great way to add some fresh flavor to just about anything. We eat this with everything from pita chips, to Chicken Shawarma, Beef Kofta, and even on Greek Burgers.
I have also been known to eat it by the spoonful. But don't tell anybody, they might think I am weird.
Of course y'all already know I am weird right?
Yield: 4 to 5 cups salsa
Greek Salsa
Fresh, easy to make, and delicious, this salsa puts a Mediterranean twist on your traditional salsa.
prep time: 15 MINScook time: total time: 15 mins
ingredients:
- 1 large cucumber, peeled seeded and diced
- 3 Roma tomatoes, seeded cored and diced
- 1 lemon, juiced
- 1/2 small red onion, chopped
- 3 tablespoons fresh parsley leaves, chopped
- 2 tablespoons olive oil
- Kosher salt
instructions
- In a medium bowl, combine the cucumber, tomato, lemon juice, red onion, parsley leaves, and olive oil. Season with salt and pepper and stir to combine. Place in an airtight container and store in the refrigerator until needed.
