Any other puppy parents out there? It has been so long since I had a puppy I forgot how crazy they can be!
I mean, we have a 2 year old granddaughter and she is a busy busy girl, so I am used to being on the go with her.
But ummm WOW a puppy? Dang! Hawk literally had me in and out so many times today I think I may just install a revolving door!
And smart? This boy is wicked smart!
In just a little over a week he is potty trained. Well, that is if Mom and Dad get to the door in the amount of time he allows. But, even with his tiny bladder, we have only had 1 or 2 pee pee accidents. So I think that is pretty awesome!
He also does a sit/stay when I feed him, and a sit/stay to get his leash put on when we go out and a sit/stay when we come back inside so I can remove his leash.
I am such a proud doggy Mom!
WOW I just used a ton of exclamation points didn't I? I guess that shows how excited I really am ?
But, what does all of this puppy talk have to do with Sheet Pan Honey Mustard Chicken?
Well, I guess I just wanted to let you know that I 100% understand busy Mom's that have to feed the family and juggle kids. Don't even get me started on how I am going to get any work done.
Kevin has had to work overnights (9 PM to 5:30 AM) this week so I have Hawk during the day, and try (keyword try) to get some work done. But today I mostly had to run in and out with the pup until Kevin got up. Now he is up, the pup is happy to have Dad, and I am trying to get some work done.
Tag teaming at it's finest!
Yield: 4 servings
Sheet Pan Honey Mustard Chicken and Vegetables
Easy to make, and sure to please the whole family, this sheet pan dinner will be a meal you will want to eat again and again!
prep time: 5 MINScook time: 55 MINStotal time: 60 mins
ingredients:
- 1 1/4 pounds baby Yukon gold potatoes, halved lengthwise
- 3 tablespoons olive oil
- Kosher salt
- Fresh cracked black pepper
- 4 thin cut boneless skinless chicken breasts *See Cook's notes
- Honey Mustard Sauce
- large head of broccoli, cut into flowerets
- 1 lemon, juiced
instructions
- Preheat oven to 425 degrees F.
- Salt and pepper the chicken breasts and set aside.
- In a large bowl, toss the potatoes with 2 tablespoons olive oil, salt, and pepper. Scatter the potatoes on a rimmed baking sheet. Roast the potatoes for 30 minutes.
- Turn the potatoes and nestle the chicken breasts in between the potatoes on the baking sheet. Brush with the honey mustard sauce and bake for 10 minutes.
- Toss the broccoli flowerets with 1 tablespoon olive oil, salt, pepper, and lemon juice.
- Remove the baking sheet from the oven and place the broccoli on the baking sheet with the potatoes and chicken. Turn the chicken over and brush with more honey mustard sauce.
- Return to the baking sheet to the oven for an additional 15 to 20 minutes, or until the internal temperature of the chicken is 165.
notes
If you can't find thin cut chicken breasts, you can cut regular breasts in half. Cook time varies depending on the thickness of the chicken breast. Always look for an internal temp of 165 degrees.

Now, let's talk about this awesome chicken dinner.
It seriously could not be an easier meal to make. I used my Honey Mustard Sauce, like I said I always have a jar of it in the fridge, sliced some potatoes, chopped up some broccoli, tossed it on a sheet pan and BOOM.
The first time I made this Kevin even commented on how I barely spent any time in the kitchen but the meal was so good.

But, the main thing I am trying to say is that this is a win/win for the whole family. Very little time in the kitchen leaves you open to help with homework, chase a puppy around, or just put your feet up and relax while your oven does all of the work.
Or, as Kevin said, it is a winner winner chicken dinner ?
