#4 This stew is so damn good I have eaten it a couple times a week for the last month!!
Maybe not big things in the large scope of life but, in my teeny tiny confined world, it is enough to make me get up and do as much of a happy dance as my gimpy foot will let me do!
It is really hard to believe that it has been almost 7 months since I broke my foot. At times it feels like yesterday and then others it seems like years ago.
A lot of it probably rides on how easily I am getting around on that specific day.
Today is a great day though ?

I had started eating keto back in June of last year but, after I broke my foot/ankle in August, the Mr was doing the dinners so strickly keto it was not.
Actually, it was well beyond even lazy keto.
There were the nights that he didn't really want to cook so pizza was on the menu, or Mexican food, or Carl's Jr.
Pizza and Mexican food we hard to do low carb, but I did the best I could.
At least with Carl's Jr. I could get a big juicy lettuce wrapped cheeseburger and still stay keto.
The one thing that he LOVES to cook is steak, ribeye specifically, he will even throw a tenderloin in there for me once in a while. He is a steak and potato guy through and through.
But man can not live by steak alone, or at least his budget can't.
So, as soon as I was able to get up and back in the kitchen, one of my goals was to come up with some hearty beef keto recipes that would be easy to make and full of flavor. He loves my Slow Cooker Beef Stew so I decided that recipe needed to be ketofied ASAP.
I also decided it needed to become an Instant Pot meal. Mostly because he has been giving me grief about buying the IP but never using it.
Well, let's see, I have been cooped up in bed since August.
But, I do have to be honest, I have kinda been dragging my feet with the whole Instant Pot thing. Afraid of the unknown I think.
People!
Why did I drag my feet?
OhhEmmmGeeee this thing is amazeballs!
All you have to do it saute your beef.
Then add the rest of the ingredients (minus the xanthan gum and parsley), set it to pressure cook, and big, bang, boom, you are noshing on the most amazing bowl of beef stew ever!
I am telling you, between using Certified Angus Beef® brand stew beef, and the Instant Pot, this beef stew recipe blows all other recipes I have ever made out of the water!
And Kevin said that too.
He even ate it several times in one week!

Keto Instant Pot Beef Stew
ingredients:
- 3 pounds stew beef, cut into 1-inch cubes
- Kosher salt
- Fresh cracked black pepper
- 2 tablespoons olive oil * see Notes
- 3 stalks celery, diced
- 2 medium carrots, diced (can omit if strict keto)
- 3 cloves garlic, minced
- 8 ounces radishes, trimmed and chopped (Can use daikon radish or regular red radish)
- 8 ounces cremini mushrooms, sliced
- 1 tablespoon onion powder
- 1 tablespoon Italian seasoning
- 1 cup red wine *see Notes
- 3 cups beef bone broth
- 1 teaspoon xanthan gum
- 1/4 fresh flat-leaf parsley
instructions:
How to cook Keto Instant Pot Beef Stew
- Pat the beef dry and season liberally with salt and pepper.
- Heat 2 tablespoons olive oil in the Instant Pot on saute.
- Place 1/3 of the stew beef in to sear. Let the beef sear on all sides until no pink shows. Remove meat with a slotted spoon and place a bowl. Repeat with another 1/3 of the beef, and then the final 1/3.
- Return all of the beef to the pot, add the remaining ingredients except for the xanthan gum and parsley. Stir to combine.
- Close the lid and steam valve on the Instant Pot.
- Cook on high pressure for 35 minutes. Allow the pressure to release naturally for 10 minutes before doing a quick release.
- Set the Instant Pot to saute and whisk in the xanthan gum. Continue to stir until the stew begins to thicken.
- Turn off the Instant Pot.
- Taste and add salt and pepper as needed and stir in chopped parsley.

If you are strict keto for health or nutritional reasons then no carrots but if it is just for the amount of carbs you can always balance out your tastes with what fits into your macros/carb count. You can always omit the carrots if you like.

My wife doesn't eat red meat, I'm a new Instapot user with some initial successes. Information I would like in recipes is if the result is freezable. Because of the volumes involved, and my desire to have meals in the future from the excess being able to freeze is a gating requirement.

Oh absolutely! I freeze this all of the time since it is just the two of us eating. You can use freezer safe containers or zipper freezer bags.

This recipe is pretty good, we have made it following the instructions. However, we also made it by cooking just the beef for 30 minutes, then adding the vegetables for 5 minutes with a 5 minute slow release and the vegatables had a much better texture. If the cook the full 35 minutes they kind of fall apart and become mushy.
