I am totally feeling like some comfort food, how about you?
It is nice that I am actually feeling like cooking since I have spent the best of the last few days flat on the sofa, doped up on muscle relaxers, because I completely threw my back out.
I have been trying to get more active, not something that is easy to do when you sit on your butt for work. I can get so locked into what I am doing that I look up and realize that I have spent 10 hours on the damn computer!!
Holy computer butt Batman!
Ya, it makes it tough.
Kevin built me a treadmill desk, which is great, but I just read an article that said for every hour you are in front of a video screen you should be working out the same amount of time.
Are you freakin' kidding me?
So I guess sleep is out of the question!
Oh no, wait, then there is the article that says if you don't get at least 7 hours of sleep a night you will gain weight #facepalm
Of course, there is the article that says stress causes you to gain weight around your middle.
Well, all of these articles are stressing me out, so maybe I will just stop reading.
That sounds like a plan!!
And I will enjoy one of my comfort food faves, meatloaf.
But this is no ordinary meatloaf, it is stuffed with pesto, and topped with marinara and melty mozzarella.
Mmmm ya, that's the ticket!!

Yield: 4 to 6 servings
Pesto Stuffed Chicken Parmesan Meatloaf
All the delicious flavors of chicken parmesan wrapped into a meatloaf stuffed with pesto. It doesn't get much better than this!
prep time: 10 MINScook time: 50 MINStotal time: 60 mins
INGREDIENTS:
- 2 lb ground chicken
- 1 cup keto bread crumbs *See Notes
- 1 tbsp Italian Seasoning
- 2 eggs, lightly beaten
- 1/2 cup Parmesan cheese
- 2 tsp pink salt
- 1 tsp freshly cracked black pepper
- 1 cup pesto
- 2 cups shredded mozzarella cheese
- 4 thick slices of fresh mozzarella cheese
- 2 cups marinara sauce (you can use homemade or store-bought)
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- In a large bowl combine the ground chicken, bread crumbs, Italian seasoning, eggs, Parmesan cheese, salt, and pepper.
- Lay out a large piece of wax paper and spray it lightly with non-stick spray. Place the meatloaf mixture on the wax paper and, using your hands, press it out evenly into a 9 x 9 square.
- Spread the pesto in an even layer and sprinkle with the shredded mozzarella cheese. Using the wax paper, carefully lift the edge of the meatloaf mixture and tuck and roll it into a log.
- Place the meatloaf onto a parchment-lined rimmed baking sheet, and bake for 45 mins. Remove from the oven and top with the marinara sauce and sliced mozzarella cheese. Return to the oven and bake an additional 5 to 10 minutes.
Notes
To make keto bread crumbs toast keto bread medium dark, allow to cool, and grind in a food processor until the desired consistency.
You can also use ground pork rinds for a gluten-free meatloaf.
